all of the pasta lines are handmade and range from classic shapes to more regional and local shapes. The best durum wheat semolina is selected and mixed with mountain water in the same care and tradition of the past. The exclusive bronze mold gives the pasta its special coarseness, which allows it to better absorb sauces and flavors. The low drying temperature, which takes 40-60 hours depending on the shapes, preserves the nutritional value of the pasta, so the flavor of the wheat comes across wonderfully during cooking.
